A holy symbol inside a potato

Updated: April 10, 2007 08:00 AM EDT

MARSHALL -- She says it's a clear sign from God. That sign came in the form of a potato.

Marshall resident Elizabeth Sachs says she was making a twice baked potato for her son on April 4th. When she sliced the potato low and behold a figure of a cross inside.

Sachs does not believe this was a random message.

She says she was fired from her job and remains unemployed. She's had to give up her dream home because she can no longer afford it.

Despite all her troubles, Sachs says every bad experience makes people who they are. She says if you have faith, you can get through anything.

"It's been really hard," Sachs said. "This potato has changed everything. I can't explain it. It's given me hope and I know God's here."

Sachs says this experience has led her to stop and appreciate life more.

This isn't the first time symbols of faith have shown up in food items. You may recall our story from 2005 about an image of the pope in a pancake.

That pancake has been published in the book Madonna of the Toast.
